Bihari samosas, also known as sattu samosas, are a popular snack in the Indian state of Bihar. These samosas are typically filled with a mixture of roasted gram flour (sattu) and spices. Here's a basic recipe for making Bihari samosas:

Ingredients:

For the Filling:

  • 1 cup roasted gram flour (sattu)
  • 1 medium-sized onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/2 teaspoon ginger, grated
  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard oil
  • 1/2 teaspoon lemon juice
  • Salt to taste
  • Water (as needed)
  • Fresh coriander leaves, finely chopped

For the Dough:

  • 1 cup all-purpose flour (maida)
  • 2 tablespoons vegetable oil
  • A pinch of salt
  • Water (as needed)

For Frying:

  • Vegetable oil for deep frying

Instructions:

  1. Prepare the Filling: a. Heat mustard oil in a pan. Once it starts smoking, let it cool down slightly. b. Add cumin seeds and let them splutter. c. Add chopped onions and sauté until they turn translucent. d. Add green chilies, grated ginger, and minced garlic. Sauté for a couple of minutes. e. Add roasted gram flour (sattu) to the pan and roast it for about 5-7 minutes until it becomes aromatic and changes color slightly. Keep stirring to avoid lumps. f. Remove from heat and let the mixture cool. g. Once it cools down, add salt, lemon juice, and chopped fresh coriander leaves. Mix well.

  2. Prepare the Dough: a. In a mixing bowl, combine all-purpose flour, vegetable oil, and a pinch of salt. b. Add water gradually and knead the dough until it is smooth and firm. It should not be too soft or too hard. Cover the dough with a damp cloth and let it rest for 30 minutes.

  3. Shape the Samosas: a. Divide the dough into small lemon-sized balls and roll each ball into a circle, about 6-7 inches in diameter. b. Cut the circle in half to form two semi-circles. c. Take one semi-circle and fold it into a cone shape, sealing the edges with a little water. d. Fill the cone with the sattu filling and seal the open edge, forming a triangular samosa. Press the edges to ensure they are sealed properly.

  4. Heat the oil in a deep frying pan over medium heat.

  5. Once the oil is hot, carefully slide in the samosas and fry them until they turn golden brown and crispy. Make sure not to overcrowd the pan.

  6. Remove the samosas from the oil and place them on a paper towel to drain excess oil.

Your Bihari samosas are now ready to be served. They are delicious when served with tamarind chutney or green chutney. Enjoy!
