Bebinca is a traditional Goan dessert that's quite rich and delicious. It's known for its layers and coconut flavor. Here's a recipe for Bebinca:

Ingredients:

  • 1 cup coconut milk
  • 1 cup sugar
  • 1 cup ghee (clarified butter)
  • 6 eggs
  • 1/2 cup all-purpose flour
  • A pinch of nutmeg powder
  • A pinch of cardamom powder

Instructions:

  1. Prepare the Ingredients:

    • Start by breaking the eggs into a bowl and beating them until well mixed.
    • Sift the all-purpose flour to remove any lumps.
    • Heat the ghee until it becomes a clear liquid, and then let it cool slightly.
    • Grate a fresh coconut to make the coconut milk or use canned coconut milk.
  2. Make the First Layer:

    • In a large mixing bowl, combine the coconut milk and sugar.
    • Mix until the sugar dissolves completely.
    • Add a quarter cup of beaten eggs and mix well.
    • Add a tablespoon of sifted all-purpose flour and continue mixing.
    • Now, add a quarter cup of the cooled ghee and mix until smooth.
    • Finally, add a pinch of nutmeg powder and a pinch of cardamom powder. Mix well.
  3. Repeat the Layering:

    • Continue this process, layer by layer, until all the ingredients are used up. The order is as follows: coconut milk and sugar mixture, eggs, flour, ghee, and spices.
  4. Baking:

    • Preheat your oven to 180°C (350°F).
    • Take a baking dish or a Bebinca mold and grease it with ghee.
    • Pour a layer of the mixture into the dish, spread it evenly, and bake for about 15-20 minutes or until it's set and turns slightly golden.
  5. Continue Baking:

    • Repeat this process for each layer, baking one at a time, until all the layers are done. The number of layers can vary, but traditionally Bebinca has 7 to 16 layers.
  6. Cooling:

    • Once all the layers are baked, let the Bebinca cool down. It's best served at room temperature or slightly chilled.
  7. Serving:

    • Cut the Bebinca into slices and serve it as a delightful Goan dessert.

Bebinca is a labor-intensive dessert, but the end result is worth the effort. The layers of coconut and the rich flavors are truly delicious and a treat for special occasions.
