Chole Bhature
Chole Bhature is a popular North Indian dish that consists of spicy chickpea curry (chole) served with deep-fried bread (bhature). Here's a basic recipe for making Chole Bhature at home. This recipe serves 4.
Ingredients for Chole (Chickpea Curry):
For the Chole (Chickpea Curry):
- 1 cup dried chickpeas (garbanzo beans), soaked overnight
- 2 large onions, finely chopped
- 2 large tomatoes, finely chopped
- 2-3 green chilies, slit
- 1-inch piece of ginger, grated
- 4-5 cloves of garlic, minced
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon amchur (dried mango powder)
- Salt to taste
- Cooking oil
- Fresh coriander leaves for garnish
- Water
For the Bhature (Fried Bread):
- 2 cups all-purpose flour
- 1/2 cup yogurt
- 1/2 teaspoon baking powder
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- Water for kneading
- Oil for frying
Instructions:
For the Chole (Chickpea Curry):
Rinse the soaked chickpeas and pressure cook them with enough water until they are soft and cooked. This usually takes about 3-4 whistles. Drain and set them aside.
Heat oil in a pan and add the chopped onions. Sauté until they become translucent.
Add ginger, garlic, and green chilies. Sauté for a couple of minutes until the raw smell disappears.
Add the chopped tomatoes, turmeric powder, red chili powder, cumin, coriander, and salt. Cook until the tomatoes turn soft and the oil starts to separate from the masala.
Add the cooked chickpeas to the masala and stir well.
Add water to achieve your desired consistency, and then cover and simmer the chole for about 15-20 minutes.
Add garam masala, amchur, and stir. Simmer for a few more minutes.
Adjust the seasoning and garnish with fresh coriander leaves. Your Chole is ready!
For the Bhature (Fried Bread):
In a mixing bowl, combine all-purpose flour, yogurt, baking powder, sugar, and salt.
Gradually add water and knead the mixture into a soft and smooth dough. You may need to adjust the amount of water to get the right consistency.
Coat the dough with a little oil, cover it, and let it rest for at least 2 hours.
After resting, divide the dough into small balls and roll each ball into a circular shape using a rolling pin. The thickness should be like that of puris.
Heat oil in a deep pan for frying. Make sure the oil is hot but not smoking.
Carefully slide one rolled bhatura into the hot oil. It should puff up as it fries. Press it gently with a slotted spoon to help it puff up.
Fry the bhature until they are golden brown on both sides. Remove them from the oil and place them on paper towels to remove excess oil.
Serve the hot Chole with Bhature. You can also serve it with some pickles, sliced onions, and a wedge of lemon for extra flavor. Enjoy your homemade Chole Bhature!
