Erissery
Erissery is a traditional Kerala dish made with vegetables, usually pumpkin, yam, or raw plantains, cooked in a spiced coconut and lentil paste. Here's a basic recipe for Pumpkin Erissery:
Ingredients:
For Cooking Vegetables:
- 2 cups of chopped pumpkin (or yam or raw plantains)
- 1/2 cup of chopped snake gourd or long beans (optional)
- Water for boiling
- Salt to taste
For Coconut Paste:
- 1 cup of grated coconut
- 1/2 teaspoon of cumin seeds
- 2-3 green chilies (adjust to your spice preference)
- A small piece of ginger (optional)
- A handful of curry leaves
For Tempering:
- 2 tablespoons of coconut oil
- 1 teaspoon of mustard seeds
- 1-2 dried red chilies
- A few curry leaves
Instructions:
Start by cooking the vegetables:
- In a large saucepan, add the chopped pumpkin (or yam or raw plantains) and optional snake gourd or long beans.
- Add enough water to cover the vegetables and a pinch of salt.
- Cook the vegetables until they are tender but not mushy. This should take around 15-20 minutes. Once cooked, drain and set aside.
Prepare the coconut paste:
- In a blender, combine grated coconut, green chilies, cumin seeds, ginger (if using), and a handful of curry leaves.
- Add a little water and blend to make a smooth paste. The paste should be thick, not too watery.
Mix the coconut paste with the cooked vegetables:
- Return the cooked vegetables to the saucepan.
- Add the coconut paste to the cooked vegetables and mix well.
- Heat the mixture on low heat, stirring occasionally. Be careful not to let it boil. It should be heated just enough to combine the flavors.
Prepare the tempering:
- In a small pan, heat coconut oil over medium heat.
- Add mustard seeds and allow them to splutter.
- Add dried red chilies and a few curry leaves. Fry them until the chilies become slightly darker.
- Pour this tempering over the erissery and mix it in.
Your Pumpkin Erissery is ready to be served. It's traditionally served with steamed rice. Enjoy!
Feel free to adjust the level of spiciness by adding more or fewer green chilies, and you can use different vegetables depending on your preference. This dish is all about the rich flavors of coconut and the blend of spices.
