Kachori is indeed a popular Indian snack. It is a deep-fried pastry filled with a flavorful and often spicy mixture. Here's how you can make a basic kachori snack:

Ingredients:

For the Dough:

  • 2 cups all-purpose flour (maida)
  • 1/4 cup ghee or vegetable oil
  • A pinch of salt
  • Water, as needed

For the Filling:

  • 1 cup yellow split peas (urad dal) or other desired filling
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon amchur (dried mango powder) or lemon juice
  • Salt to taste
  • Oil for deep frying

Instructions:

  1. Prepare the Filling:

    • Rinse and soak the split peas (or your preferred filling) for a few hours, then drain.
    • Heat some oil in a pan, add cumin seeds, and let them splutter.
    • Add the soaked and drained peas, along with red chili powder, garam masala, amchur, and salt.
    • Cook the filling mixture until it becomes soft and well-cooked. Allow it to cool.
  2. Prepare the Dough:

    • In a mixing bowl, combine the all-purpose flour, a pinch of salt, and ghee or vegetable oil.
    • Gradually add water to the mixture and knead it into a smooth and firm dough. Cover it and let it rest for 20-30 minutes.
  3. Shape and Fill the Kachoris:

    • Divide the dough into small, equal-sized balls.
    • Take one ball of dough, flatten it, and roll it out into a small circle (about 4-5 inches in diameter).
    • Place a spoonful of the prepared filling in the center of the circle.
  4. Seal the Kachoris:

    • Carefully gather the edges of the dough circle to encase the filling and pinch it together to seal it. Make sure there are no openings.
    • Flatten the filled dough ball gently with your hands.
  5. Deep-Fry the Kachoris:

    • Heat oil in a deep pan or deep fryer for deep frying.
    • Once the oil is hot, carefully slide in the kachoris one at a time.
    • Fry them until they puff up and turn golden brown, turning them occasionally to ensure even cooking.
    • Remove the fried kachoris using a slotted spoon and drain excess oil by placing them on paper towels.
  6. Serve:

    • Serve hot kachoris with tamarind chutney, mint chutney, or yogurt.
