"Mamidi Tandra" or mango delicacies are quite popular in South India during the mango season. One of the most common recipes is "Mamidi Tandra Pachadi," which is a mango pickle or chutney. Here's a simple recipe for making Mamidi Tandra Pachadi:
Ingredients:
- 2 large ripe mangoes
- 1/2 cup red chili powder (adjust to your spice preference)
- 1/4 cup mustard seeds
- 1/4 cup fenugreek seeds
- 1/4 cup oil (preferably sesame or vegetable oil)
- 1/2 tsp turmeric powder
- 1/4 tsp asafoetida (hing)
- Salt to taste
Instructions:
Wash, peel, and chop the mangoes into small, uniform pieces.
In a clean, dry bowl, add the mango pieces.
Sprinkle salt and turmeric powder over the mango pieces and mix well. Allow it to rest for about an hour.
Meanwhile, dry roast the mustard seeds and fenugreek seeds separately until they turn slightly brown and emit a nice aroma.
Once the roasted seeds have cooled, grind them to a fine powder in a blender or spice grinder.
After an hour, you'll notice that the mango pieces have released some moisture. Drain this excess liquid from the mango pieces.
In a separate pan, heat the oil until it's hot but not smoking. Turn off the heat and add asafoetida to the hot oil.
Allow the oil to cool down to room temperature.
In a mixing bowl, combine the mango pieces with the ground mustard and fenugreek seeds.
Add red chili powder and mix well.
Pour the cooled, asafoetida-infused oil into the mixture and mix everything thoroughly. Ensure that the mango pieces are well coated with the spices and oil.
Transfer the Mamidi Tandra Pachadi to a clean, dry, airtight container.
Allow it to sit for a day or two to let the flavors meld and mature.
Your Mamidi Tandra Pachadi is now ready to enjoy with rice or as a condiment with various Indian dishes. Keep it refrigerated to extend its shelf life. The taste of this pickle matures with time, and it's a delightful addition to any South Indian meal during mango season.
