Sorgam, also known as Chettinad Wheat Halwa, is a traditional South Indian sweet dish that hails from the Chettinad region of Tamil Nadu, India. It is a delectable and rich dessert made from wheat, sugar, ghee (clarified butter), and flavored with cardamom and sometimes garnished with nuts like cashews or almonds. The name "Sorgam" roughly translates to "heaven" or "paradise," indicating the heavenly taste of this sweet.

Here's a basic recipe for making Chettinad Wheat Halwa:

Ingredients:

  1. 1 cup whole wheat grains (wheat berries)
  2. 2 cups sugar
  3. 1 cup ghee (clarified butter)
  4. 1/2 teaspoon cardamom powder
  5. A handful of cashews or almonds (optional, for garnish)
  6. A pinch of saffron strands (optional, for color and flavor)

Instructions:

  1. Wash the whole wheat grains thoroughly and soak them in water for around 6-8 hours or overnight.

  2. Drain the soaked wheat and grind it into a coarse paste without adding too much water. You want a consistency similar to a coarse wheat paste or rava (semolina).

  3. Heat a heavy-bottomed pan or kadai and add the ground wheat paste to it.

  4. Cook the wheat paste on low to medium heat, stirring continuously to prevent sticking. This process can take a while, as you want to cook the wheat until it loses its raw taste and turns a deep brown color. This can take anywhere from 30 minutes to an hour, depending on the heat and the quantity being cooked.

  5. While the wheat is cooking, prepare the sugar syrup. In a separate pan, heat the sugar with a little water to make a thick syrup. Add the cardamom powder and saffron strands to the syrup for flavor and color.

  6. Once the wheat paste has turned brown and has a rich aroma, add the ghee to it and continue cooking. The ghee will help to further cook and flavor the wheat paste.

  7. Gradually, add the sugar syrup to the wheat paste, stirring continuously. Be cautious as the mixture will sizzle and bubble up. Keep stirring and cooking until the mixture thickens and starts leaving the sides of the pan. This can take another 20-30 minutes.

  8. If you're using nuts, roast them in a separate pan with a little ghee until they turn golden brown.

  9. Once the halwa reaches the desired consistency, remove it from the heat. Garnish with the roasted nuts and let it cool for a while.

  10. Serve the Sorgam or Chettinad Wheat Halwa warm or at room temperature. It can be enjoyed as a dessert or a special treat on festive occasions.
